Veal Cordon Bleu
2 lbs. thin Veal Cutlets (Italian style avoids having to pound)
1/2lb. thinly sliced boiled ham
1/2 lb. sliced Swiss cheese
1-2 eggs slightly beaten
Grated Parmesan cheese
Olive oil
Butter
Take the veal cutlets pounded very thin, cut into even pieces and put together like a sandwich with a thin piece of boiled ham and a slice of Swiss cheese as filling. Add 1 Tbs. of water to the slightly beaten egg. Dip the veal "sandwiches" in the egg mixture and then in grated Parmesan cheese. Place on tray lined with wax paper and refrigerate for 20-30 minutes covered with wax paper. Saute slowly in a mixture of one half olive oil and butter until brown. about 20 minutes. Services 4 people.
