Cherry French Toast
Serves 4
Ingredients:
1 8 oz. package cream cheese, softened
1 cup canned red tart cherries, drained
1 loaf unsliced egg bread
6 eggs, well beaten
1/3 cup heavy cream
cinnamon
Directions:
1. Slice the egg bread into 1 1/2" slices. Cut each slice down 3/4 of its length so that you have almost formed two slices of bread, but the bottom 1/4 still holds the entire piece together. Set aside.
2. Beat the cream cheese, heavy cream, and cherries together on medium speed until well combined. Spread approximately 1/4 cup of the mixture into the pocket of each slice, and press the slice together very gently, distributing the filling evenly.
3. Dip each slice of the stuffed egg bread lightly into the beaten egg mixture to coat all sides. Place immediately onto a lightly oiled griddle. Sprinkle lightly with cinnamon and turn when golden brown. After frying the second slide until golden, remove each slice to a cutting board, and very gently slice each piece in half diagonally. To garnish, sprinkle with powdered sugar. Arrange the triangles on plates and serve immediately with maple syrup.
