Asparagus with Tomatoes
Ingredients
1 1/3 Tbs. olive oil
1 medium onion, chopped
16 oz. asparagus, trimmed and cut into thirds
3 cloves garlic, minced
6 oz. grape or cherry tomatoes
1Tbs. balsamic vinegar
Fresh ground black pepper to taste
Directions
Heat olive oil in skillet on medium low heat.
Add onion and cook on medium low heat about 5 minutes.
Add asparagus in batches, starting with the thicker pieces first.
Every two minutes or so, add the next batch.
Add the tips last.
Heat through.
Add the garlic and grape or cherry tomatoes.
When the tomatoes pop open, sprinkle the balsamic vinegar and ground black pepper over mixture.
Mix well and serve.
